Easter was a smorgasbord of family affairs, as are most holidays for me. I come from a family that is split by so many degrees we often have 3 or more stops to make on our rounds of holiday wishes. And they often encourage me to eat. “Eat, eat, have dessert. Try this, try that…”
Usually it doesn’t bother me, because I just eat my favorites at each house and don’t have to eat a full meal anywhere with the valid excuse, “I just ate or I have to eat at…” So most holidays, I skip the ham and turkey (not my favorite) and head for the macaroni and cheese, dinner rolls and pie.
That is, until this Easter. I know for me, protein heavy meals fill me up and leave me feeling full for much longer. I mean stuffing, while delicious, fills me up but leaves me craving more starch or worse, sugar, in about 2 hours. So, this year I focused on eating the ham and skipping dessert. I also, only ate two meals, even though I attended 3 food events. Though, I have to admit I tried and couldn’t resist some of my favorites.
Here is my food journal for Easter Sunday.
Exercise: 30 min yoga
Breakfast: 2 egg whites, ¼ cup of cheese, salsa, 1 tbsp sour cream, stuffed in half a whole wheat pita = 260 calories
Lunch: Ham, 1 deviled egg, beans, 1 tbsp corn soufflé, 1 tbsp potato salad, 1 dinner roll = 725 calories
Dinner: 4 Triscuit, 1 tbsp cream cheese, 1 tbsp macaroni and cheese, 1 pound of crawfish = 350 calories
Water: 8 cups
Total: 1335 calories
